Why Ceremonial Grade Matters

Commercial chocolate is processed at high temperatures that destroy flavonoids and alter the alkaloid profile. Ceremonial cacao is kept below 45°C to preserve:

How to Prepare

FAQ

How is this different from regular cocoa powder?

Ceremonial cacao is whole cacao paste (includes cacao butter), minimally processed at low temperatures. Cocoa powder is defatted and often Dutch-processed (alkalized), which destroys flavonoids.

How much caffeine does it contain?

Approximately 25-35mg per 30g serving (roughly 1/4 the caffeine of coffee). The primary alkaloid is theobromine, not caffeine.

Can I use this for baking?

Yes, but heat above 45°C will reduce flavonoid content. Best consumed as a drink to preserve benefits.

Why is it bitter?

Pure cacao has no added sugar. The bitterness comes from alkaloids (theobromine) and tannins. You can add natural sweeteners if desired.
